Hummus-Italian Style


Ingredients

  • 1 1/2 cups cooked Cassava (yuca/tapioca-root) (220g)
  • 2 small (4.5g) fresh garlic cloves 
  • Juice and zest of 1 lemon slice
  • 1/4 cup chicken broth (1/4 cup water, mixed with 2 tsp CBF Chicken Consomme) 
  • 2 Tbs olive oil

Directions

  • In a small food processor fitted with steel blade, chop garlic and lemon zest together until finely minced. Add cassava, broth and olive oil and process until smooth. 
  • Transfer to a small serving dish, garnish with toppings if you wish and serve with vegetables.
