Potato Latkes


Ingredients

  • 3 medium potatoes (650g), peeled
  • 1/3 cup onion, sliced thin
  • 3/4 cup MixQuick 
  • salt and pepper to taste 
  • canola oil for frying

Directions

  • Using a hand grater or food processor, coarsely grate the potato.
  • Place in a bowl and add the sliced onion, MixQuick, salt and pepper. Toss well to combine and let the mixture sit for 5 minutes while moisture from the potatoes is released allowing the mixture to bind together.
  • Heat a small amount of canola oil in a large non-stick skillet over medium-high heat. 
  • Drop level spoonfuls of potato mixture into the hot oil. Saute until golden brown on both sides, pressing them lightly with the spatula when you turn them. As they are cooked, drain on paper towels.
  • Serve immediately with with applesauce.
  • NOTE: Posted nutritional information does not include frying oil.
